How will the Democratic nominee be chosen?

Democrats will choose their nominee at their convention in Chicago. There are about 4,700 delegates who get to vote, including superdelegates, aka party elites. Luckily for Harris, Biden endorsed her, and this will likely influence the delegates.

What about the VP?

If Harris becomes the nominee, she'll likely pick her own running mate. If she doesn't, well, it's anyone's game then! Gavin Newsom might be a contender, but California is a big, blue state, so that could get tricky.
